Chicken Cheese Chowder

1 serving = 1 cup
4 c. chicken broth
2 medium sweet potatoes, chopped
1 c. celery, chopped
1 c. carrots, chopped
1 c. onion, chopped
1/3 c. light margarine
1/3 c. flour
3 c. skim milk
8 oz. Light Velveeta
2 c. shredded cooked chicken
In a large pot combine chicken broth, sweet potatoes, celery, carrots and onion. Cover and boil about 15 min until veggies are tender. In a medium pot melt butter over low heat, add flour and stir. Slowly add milk, stirring constantly. Continue to stir until thick and bubble. Add flour mix to veggie mix. Gently stir in cheese until melted. Add chicken. Heat thoroughly.
