Creamy Scalloped Potatoes

1 serving = 1/2 cup

  • 4 c. potatoes, peeled & sliced
  • 3 T. butter
  • 3 T. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 c. skim milk
  • 1/4 c. onion, finely chopped

Preheat oven to 350 degrees.? Place potatoes in greased 9×9 baking dish and add onion.? Heat butter in saucepan over low heat.? Blend in flour, salt and pepper stirring until mixture is smooth.? Stir in milk and heat to a boil, stirring constantly.? Boil for one minute while stirring.? Pour over the potatoes and cover with aluminum foil.? Bake for 30 minutes.? Uncover and bake another 45 minutes or until potatoes are tender.? Let stand for 10 minutes before serving.
