Broccoli Cheese and Rice Casserole

1 serving = 1 cup

  • 1 T. butter
  • 16 oz. bag broccoli
  • 1 can fat free cream of mushroom
  • 1 can fat free cream of chicken
  • 12 oz. 2% Velveeta
  • 3 c. cooked rice
  • 1/2 c. onion

Preheat oven to 325 degrees.? Saute onion in butter in large pan.? Add broccoli and soups to onion and stir together. Cut Velveeta into small squares and add to broccoli stirring until Velveeta is smooth and melted.? Pour cooked rice into 9×13 greased dish.
Pour broccoli and cheese mixture over rice.? Cook for 20-25 minutes. Until the cheese looks very lightly browned.
