Cheesy Cheesy Veggie Soup

1 serving = 1 cup
- 2 lb. frozen veggies of your choice (I like to use the standard mixed vegetables)
- 3 cans chicken broth
- 1 can original Rotel (if you want it spicier you can use a different Rotel)
- 10 oz. Velveeta Light
Place all ingredients except for Velveeta in a pot and bring to a boil. Let simmer for 4-5 minutes. Add Velveeta and stir until melted.
Note: If you eat this with crackers remember to add on the extra points.
