Chase’s Shrimp Fried Rice

Ingredients:
- 9 oz ready to eat shrimp, tails removed cut into ½ inch pieces
- 2 c. frozen peas, thawed
- 2 c. frozen carrots, thawed
- 5 c. cooked rice
- 4T. diced onion
- Soy sauce (less sodium)
- Olive oil
- 3 eggs
Heat 1 T. olive oil in large wok or skillet on medium-high heat. Add onions and cook until clear, stirring occasionally. Add eggs to onions and scramble together until eggs are fully cooked. Remove egg/onion mix from skillet and set aside. Add 1 T. olive oil plus 4 T. soy sauce to skillet then add shrimp. Cook shrimp for 3 minutes tossing gently with oil and soy sauce. Add peas and carrots to shrimp. Cook 7 minutes stirring occasionally making sure not to burn. Add cooked rice; pour 4 T. olive oil and ½ cup soy sauce evenly over rice. Mix continuously for 8-10 minutes browning rice, but making sure not to burn rice. Add egg/onion mix back to rice stirring together for 30 seconds.
