Mexican Casserole

1 serving = 1 cup
1 lb. lean ground beef
1 (10.75oz) can cream of chicken soup
1 (10oz) can Ro-Tel(I use mild,but can use the flavor you prefer)
1 small onion, chopped
1 c. crushed taco shells
1 c. 2% cheddar cheese, shredded
Preheat oven to 350 degrees. Cook burger until done. Mix together soup, Ro-Tel, onion and beef. Spread crushed taco shells in bottom of greased 13×9x2 baking dish. Spread meat mix on top of shells and cover with cheese.? Bake for 30 minutes.
Makes 6 servings.
Note: This is really good to put on top of lettuce as a taco salad with some fat free sour cream, salsa, tomatoes and black olives. If you do not use fat free sour cream make sure you add in the point value to your serving.
