Cashew Chicken

1 serving = 1/2 cup

  • 1 lb. boneless chicken cut into bite size pieces
  • dash salt, pepper & paprika
  • 1 Tbsp. oil
  • 1 c. chopped onion
  • 1 1/2 c. low sodium chicken broth
  • 1 1/2 Tbsp. cornstarch
  • 2 Tbsp. low sodium soy sauce

Brown chicken in oil, sprinkle with salt, pepper and paprika as it fries.? Cook until brown.? Add onion and cook until onion is tender.? Mix broth, cornstarch, soy sauce.? Slowly add to chicken, stirring constantly until thickened.

Makes 5 servings.

Serve with rice, but make sure you add the points for the rice.
